Holiday Tortilla Pinwheels

Ingredients:


½ c sour cream
½ c  finely chopped red  bell pepper
½ c finely shredded cheddar cheese
2 T. finely chopped ripe olives
2 T. diced green chilies (canned)
1 T. chopped fresh parsley
1 pkg. (3 oz) cream cheese, softened
3 spinach, tomato, wheat or plain  tortillas (8 to 10 in. diameter)

Directions:
Mix all ingredients except tortillas.  Spread cheese mixture evenly over tortillas, and roll up. Wrap rolls individually in plastic wrap.  Refrigerate at least 3 hours.  Cut into 1 inch slices.  Makes 30 appetizers
Tips:

Use taco seasoning to flavor the cream cheese - to taste. Also mix it up by using different types of flour tortillas - tomato, wheat, spinach, jalapeño, etc. (I used the jalapeño and they seemed to be everyones favorites, I was very surprised) It adds a bit of color and a little bit different taste with each pinwheel.
