Jelly Cookies



Ingredients:

1 Cup butter, softened
2 1/2 Cups all-purpose flour
1/2 cup white sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon baking powder
1 teaspoon vanilla extract
1/4 cup raspberry preserves (or any kind you like)
1/3 cup powder sugar for decoration (optional)
sugar in the "raw" (optional)

Directions:

1. preheat oven to 350, grease baking sheet or spray with non-stick spray.
2. cream butter with white sugar and brown sugar. Beat in the egg and vanilla
3. Mix the flour and baking powder together. Stir in the flour mixture into the butter mixture and combine.
4. Chill for at least 30 minutes.
5. form dough into 1 inch balls and roll in "raw sugar" (optional). Place on to prepared baking sheet. Make indentation in each cookie and fill with jam. Cook for 12-15 minutes. Let cool completely and sprinkle with powdered sugar (if you didn't use raw sugar).

Tips: use a soda pop bottle top to make indentation.
